Inyama Yenhloko (Zulu Head Meat Stew)


Ingredients:


- 1 whole cow or sheep head, cleaned and split

- 2 large onions, finely chopped

- 4 cloves garlic, minced

- 2 tomatoes, diced

- 2 tablespoons vegetable oil

- 2 teaspoons ground coriander

- 2 teaspoons ground cumin

- 2 teaspoons paprika

- Salt and pepper to taste

- Fresh herbs for garnish (parsley or coriander)


Equipment:


- Large pot for boiling

- Pan for sautéing

- Chopping board and knife


Instructions:


1. Prepare the Head:

   - Thoroughly clean and wash the cow or sheep head. Remove any hair and excess skin. Split the head into manageable pieces.


2. Boil the Head:

   - In a large pot, place the head pieces and cover with water. Bring to a boil and simmer for 1-2 hours or until the meat is tender. Skim off any impurities that rise to the surface.


3. Saute Aromatics:

   - In a separate pan, heat vegetable oil over medium heat. Add chopped onions and minced garlic. Cook until onions are translucent.


4. Add Spices:

   - Stir in ground coriander, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes to allow the spices to release their flavors.


5. Integrate Tomatoes:

   - Add diced tomatoes to the onion and spice mixture. Cook until the tomatoes break down and the mixture forms a rich, fragrant sauce.


6. Combine with Head Meat:

   - Transfer the sautéed mixture to the pot with the boiled head pieces. Allow the flavors to meld by simmering over low heat for an additional 30-45 minutes.


7. Serve:

   - Inyama Yenhloko is traditionally served hot. Garnish with fresh herbs such as parsley or coriander for added freshness.
