Amasi Recipe (Fermented Milk)

Ingredients:

- 1 quart (4 cups) whole milk

- 2 tablespoons plain, unsweetened yogurt with live cultures

- A clean, airtight container

Equipment:

- Saucepan

- Thermometer

- Whisk

- Clean kitchen towel or cheesecloth

Instructions:

1. Heat the Milk:

   - Pour the whole milk into a saucepan and heat it over medium heat. Use a thermometer to monitor the temperature. Heat the milk to around 180°F (82°C), then remove it from the heat.

2. Cool the Milk:

   - Allow the milk to cool to around 110°F (43°C). This temperature is suitable for the activation of the yogurt cultures.

3. Inoculate with Yogurt Culture:

   - In a small bowl, mix the 2 tablespoons of plain yogurt with a small amount of the cooled milk. Whisk until smooth. Add this mixture back into the saucepan with the remaining milk and whisk thoroughly.

4. Transfer to Container:

   - Pour the milk mixture into a clean, airtight container. Ensure the container is large enough to allow for expansion during fermentation.

5. Cover and Ferment:

   - Cover the container with a clean kitchen towel or cheesecloth and secure it with a rubber band or string. Place the container in a warm, undisturbed location for fermentation. This process usually takes 12-24 hours.

6. Check for Consistency:

   - After the fermentation period, check the consistency. The amasi should have thickened and have a tangy flavor. If not, let it ferment for a few more hours.

7. Refrigerate:

   - Once the desired consistency is achieved, refrigerate the amasi to halt the fermentation process. It will continue to thicken slightly in the refrigerator.

8. Serve:

   - Amasi is ready to be enjoyed! Serve it chilled on its own or use it in various recipes.
