Uphuthu namasi (dry pap with sour milk)

Recipe: Maize Meal Porridge

Ingredients:

- 1 1/4 cups water

- 1 teaspoon salt

- 300 grams maize meal

- 3 cups amasi (cultured milk), for serving

- Cream, for serving

- Sugar, for serving


Instructions:

1. In a saucepan, bring the water to a boil. Add the salt and half of the maize meal, then reduce the heat to low.

2. Stir the mixture with the back of a wooden spoon, gradually adding the remaining maize meal until the mixture resembles crumbs. Cook for 20 minutes, stirring every 5 minutes.

3. Allow the porridge to cool slightly, then serve with amasi, a splash of cream, and a tablespoon of sugar.
